Every session is led live by a chef from the Paris atelier — most often by Claudine herself, and otherwise by one of the seven pâtissiers on her teaching rotation. You cook along in real time, ask questions as the dough comes together, and learn the small decisions that separate a competent croissant from a memorable one.
Online students receive a Chef's Kit by post two days before class: precisely weighed French flour, Valrhona chocolate, cultured butter from Brittany, and the silicone and copper tools needed for the recipe. Each kit is dispatched from our New Jersey fulfillment center in temperature-locked packaging and arrives at your door with full ingredients and printed method sheets.
Paris students join us at the Rue de Maubeuge atelier for a working morning in the lab — aprons, espresso, and the team alongside you for the full session.

Before You Book
Kits are dispatched from our New Jersey center two days before your scheduled class, in temperature-locked, fully recyclable packaging. We ship to all 50 US states and have held a 98.6% on-time arrival rate over the last 24 months. Tracking is emailed the morning your kit leaves the warehouse.
No. Our classes serve first-time bakers and former professionals alike — the only prerequisite is comfort with a stand mixer and a desire to learn the why behind the steps. Each session opens with a 20-minute review of equipment and technique before the dough comes together.
Online classes meet live on the Zoom platform, with two camera angles on the chef's bench and a third dedicated to close-up piping and lamination. Students keep their microphones muted by default and unmute to ask questions; the chef circulates the room throughout the bake and offers personalized feedback as you plate.
Every booking is backed by a written guarantee: if the class does not meet our standard on the day, you are welcome to a full refund, no questions asked. Outside of that, we are happy to transfer your seat to a future session on the calendar, or to extend the Chef's Kit as a gift to a friend — just let us know as soon as you can.
